Some meals are meant for late-night pizza slices and that hidden off-Strip gem. Others call for glitz, glam, and an all-out experience worthy of a special occasion. The best news? Las Vegas definitely has both – and when it comes to the latter, Bellagio’s dazzling Carbone Riviera has officially secured a spot among the nation’s top 21 most beautiful new restaurants, according to the Robb Report.
Carbone Riviera, Carbone’s newest addition to Vegas

This new Bellagio hotspot brings together MFG’s cool factor and the timeless glamour of Lake Como. As theRobb Report article states, designer Martin Brudnizki has gone all out, wrapping the space in sea-inspired tile work and massive mirrors.
Entering Carbone Riviera is an experience in itself: you pass through a mosaic portal into a citrus grove (with Amalfi lemons) before settling into the dining room. Here, you’ll be surrounded by Picasso, Renoir, and Miró. Once you’re seated, you get to enjoy the views through those big arched windows while the staff takes care of the rest.

The real showstopper is the expansive outdoor patio right next to the famous fountains. Yep – it’s the ultimate dazzling escape.
The concept
Carbone Riviera is the historic reinvention of Bellagio’s most legendary dining room as one of the greatest fish restaurants in the world. It’s a seafood forward spot, which features an interpretation of beloved Italian coastal cuisine. Their promise? “Guests can experience the most extraordinary fish and seafood available in the world on that day. “
What’s on the menu?

Expect nothing short of extraordinary. Here are just a couple of highlights you can start the night with:
- Tuna Calabrese
- Yellowtail Cinese
- Red Sicilian Prawns
- Lightly Grilled Chu Toro
- Scottish Langoustines
- Santa Barbara Sea Urchin
- Caviar & Hiramasa Royale
- Burrata & Caviar Service
You can follow up with upscale macaroni, such as Linguine Vongole Rosso or Ricotta Gnocchi con Caviar. Entrees feature Grilled Salmon Oreganata, Lamb Chops Scottadito, Shrimp Parmigiana, and more.
Of course, guests can also enjoy a whole fish, for the full authentic experience. You can go for the Dover Sole, Wild Turbot, and many other choices – including the Alaskan King Crab (when ordered in advance).
If you’re feeling more like the land is calling you, can’t go wrong with a high-quality Ribeye or Bone-In New York Strip.
End the meal with an iconic Sicilian Lemon Cheesecake, or sip on a Pistachio Colada.
If this sounds as good to you as it does to us, add the stunning Carbone Riviera to your list of destinations for a truly special occasion dining experience.
