If you’ve been wondering what’s taking over the old Bazaar Meat space at SAHARA, the wait is almost over. On Friday, April 24, we’re getting treated to one of the most anticipated restaurant debuts of the year: Maroon.
Maroon – by a James Beard Award-winning chef!
Helmed by James Beard Award-winning Chef Kwame Onwuachi – the mastermind behind massive East Coast hotspots Tatiana and Dōgon – Maroon marks his highly anticipated West Coast debut. Even cooler? It’s officially making history as the first Black chef-led restaurant on the Las Vegas Strip.
What’s on the menu?
Maroon isn’t your traditional stuffy steakhouse. It’s a fiery Afro-Caribbean concept centered entirely around live-fire cooking. The beating heart of the kitchen is a glowing, custom-built jerk pit that will be serving premium cuts of steak. You can also enjoy whole smoked fish, and insanely flavorful jerk-spiced chicken. Add in a speakeasy-inspired rum room and a whole lot of Caribbean spices, and our dining scene is getting a brand-new flavor profile.
Why Maroon?
The name itself carries deep meaning, paying tribute to the Jamaican Maroons – descendants of enslaved Africans who escaped captivity and founded sovereign communities in the mountains of Jamaica. That resilience and vibrant culture are found into every detail. The dining room brings a very energetic island vibe right to the Strip!
