Most foodies will agree – there are few cuisines out there better than Italian and Japanese. And when those two meet, magic happens. James Beard-nominated Executive Chef Robbie Felice agrees. The exclusive pop up that features his signature fusion, called PastaRAMEN, arrives in Vegas this May – for one month only.
pastaRAMEN in Vegas
pastaRAMEN got its start as a pop up omakase experience, during the pandemic. Traditionally, Omakase is a chef’s choice sushi experience where you trust the chef to serve the freshest, best dishes one at a time. It’s personal, high-quality, and a bit of an adventure. But this one has an Italian twist, and you can expect a lot more than sushi. One of their signature dishes, for example, is the Mochi Ramen Carbonara Tsukemen.
The pop up made huge waves in New York City, Miami, Los Angeles, and more. Following that, pastaRAMEN opened a brick and mortar location in Montclair, NJ, about which NJ.com says that “landing a table here isn’t as hard as getting Taylor Swift tickets, but it’s close.” Celebrities who have been to pastaRAMEN’s pop ups include Adele, Halsey, Aaron Paul and Iron Chef Masaharu Morimoto, and others. We’ll call that a success!
This May, for the first time and for one month only, Las Vegas diners will have the opportunity to experience Chef Robbie Felice’s approach to Japanese Italian cuisine. Set to launch on Tuesday, May 15, the exclusive experience will be hosted at a secret location, inside one of the city’s most sought-after dining destinations. If lucky enough to get a spot, you’ll experience an all-new menu, with exclusive sake (Japanese rice wine) offerings and pairings.

The journey to Las Vegas is actually a homecoming for Chef Robbie Felice. He spent his formative years here, right at B&B Ristorante. He eventually rose to the role of Sous Chef and overseeing the Salumi Program for multiple Vegas locations. Now, in a full-circle moment, Felice is returning to Sin City with pastaRAMEN, bringing his acclaimed Wafu-Italian cuisine.
