Pastrami lovers, gather around – SoCal’s favorite, The Hat, is bringing its famous pastrami dip sandwiches to Vegas. Sin City will be the first location outside of California, so get ready for long lines that will totally be worth it once you take that first bite.
The Hat is coming to Vegas

After years of anticipation and a previous false start (almost 6 years ago), The Hat, Southern California’s iconic chain, is officially joining the party in Vegas. Construction is currently underway, and we’re expecting to see an ‘open’ sign in spring 2026. You’ll find it at 6215 S. Rainbow Blvd., located at the corner of Sobb Avenue.
What’s on the menu?

The Hat is known for its generous portions and old-school fast-food charm. The chain managed to built a cult following over nearly 75 years – it was significantly harder then than it is now. The Las Vegas menu will feature the chain’s signature items, including its massive pastrami dip sandwiches (with homemade jus), pastrami burgers, and mounds of chili cheese fries (seriously, don’t skip those). Once open, the Spring Valley location will offer both locals and transplants a taste of the San Gabriel Valley staple, without the drive across the state line.
If you’re stopping by, we obviously recommend going with the classics – after all, they have a reputation for a reason. But in case that doesn’t sound like your thing, you’ll also find hot-dogs and plenty of sandwiches.
The Hat – the legend – since 1951

The Hat first opened in Alhambra, California, as a small roadside stand specializing in pastrami dip sandwiches. It always stood out for big portions and high-quality ingredients. As you can tell – some things never changed.
But besides great food, The Hat also has a cute story. Joseph and Corky, who would later on end up being owners, would eat here in high-school. Moreover – they met their future wives here, too. The brothers purchased the store in 1981, and started the expansion 3 years later. Until this spring, all locations were in California. In 1989, another iconic thing happened – the city of Alhambra proclaimed The Hats Neon sign a historic landmark!
Corky unfortunately passed in 2024, but Joseph keeps his legacy alive, and it still in charge of The Hat.
