Vegas locals (and California transfers) have waited years for Southern California’s iconic pastrami chain, The Hat, to cross the state line. The legendary sandwich shop has finally opened its doors in Spring Valley, and the demand has been unprecedented. Aaaaand it’s a problem.
The Hat cuts down operation hours in Vegas
Since its highly anticipated Las Vegas debut, the restaurant has been bombarded with constant crowds and massive lines. The social media hype has become pretty overwhelming….so The Hat has been forced to dial back its late-night operations. It was supposed to stay open until 1 AM Monday through Saturday, but the shop announced it will now stop accepting walk-up and drive-thru guests at midnight. This is to better manage the long wait times and late-night rushes.

Founded as a small roadside stand in Alhambra, California, in 1951, The Hat built a cult following over nearly 75 years. The spot is known for its generous portions, massive pastrami dip sandwiches with homemade jus, and crazy mounds of chili cheese fries. This Vegas outpost marks the brand’s first-ever expansion outside of California. With its old-school charm intact, The Hat is proving that its famous pastrami is well worth the wait – but the line gets cut off a little earlier than planned – at least for now.
