What’s missing in Vegas, when it comes to our dining scene? Honestly – pretty much nothing. But you know what we could use more of? Ranch-to-table. And Chef Marc Marrone, together with his business partner Todd Lunger, got the memo. Say hello to the newly opened Diamond Spur Butcher Shop & Deli.
Inspired by Marrone’s childhood memories of Arthur Avenue (the Bronx’s legendary Little Italy meat market), Diamond Spur brings a dose of East Coast, old-school deli culture to Sin City. But what truly sets it apart is what’s going on behind the scenes: a fully integrated, regenerative meat supply chain.

Diamond Spur isn’t just buying good beef; they’re raising it. The shop serves as the exclusive Vegas retail and distribution hub for Diamond Spur Provisions & Meats. Yep -they’re sourcing directly from their own ranches.
Their operation relies on strategically located regional hubs, including Evergreen Farms in Missouri, Evergreen Ranching and Livestock in the Black Hills of South Dakota, and Diamond E in southeastern Arizona. All of their ranches are Audubon Certified, meaning the land is managed to create a thriving environment for wildlife. This regenerative approach produces nutrient-dense beef that is better for the land, the animals, and for…you, of course!
For Las Vegas Weekly, Marrone said: “We realized that the only way that I could confidently look you in the eye and tell you what’s in something is to do it ourselves and raise it.”
What’s on the menu?
We recommend exploring as much as you can…since you probably won’t just have one favorite. The menu features a chicken Parme sandwich, a classic burger (for just $6.99!), rotisserie chicken, and more. If you’re here for the beef, go with the Chopped Cheese, and thank us later.
But the social feeds have spoken, and there’s a favorite. Don’t sleep on the Hot Chicken Caesar Hero – Calabrian pepper spread, chopped romaine, house Caesar dressing, chopped bacon, and parmigiano – all on a sesame seed semolina roll. This item is already (unofficially) competing for the best sandwich in Vegas. But we’ll let you be the judge of that.
